Red Pepper Mushroom Pulao

Serves : 5-6 Person

Ingredients

For the Rice:

500 gms. Basmati Rice
4 nutmeg flowers or Javantri (mace)
4 Crushed green Cardamoms
4 tomatoes skinned and pulped
3 large onions chopped and cooked in ghee
3 potatoes cubed and fried
1 tsp. sugar
salt
Ghee

Ingredients

For the Pepper Stuffing : 

8 red peppers
600 gms. mushrooms, washed and finely chopped
200 gms. golden raisins washed
200 gms, finely chopped onions
1tbsp. grated fresh ginger
2 cups pulped tomatoes
1 tsp. garam masala
1 tsp. chilli powder
1 tsp. cumin powder
1 tsp. Parsi dhansakh masala
1 tsp sugar
oil
salt

Method of Preparation

  1. Wash the peppers and cut a hole around the stalks and deseed them. Keep the stalks.
     
  2. Cook the onions for stuffing till soft 3 tabespoons of oil. Add the mushrooms and the ginger, cook for 5 mins. and then
    add all the spices and sugar. mix well and add the tomato pulp. Cook till the mixture dries up. Cool and mix the raisins. Stuff the peppers with mixture. Place the peppers in a metal sieve, cover and steam them or cook in a dekchi in slightly salted water over a low flame or, cooking a rice cooker or, cook in the pulao rice. Taste the mixture for salt.
     
  3. Wash the rice and place it in a flat board mouthed dekchi. Add the spices.
     
  4. Cook the onions till soft in 3 tablespoons of pure ghee and add the tomato pulp with salt and 1 tablespoon sugar. Give a quick boil and add the onion and tomatoes to the rice in the dekchi. Add sufficient water to cook the rice. If you are cooking the peppers in the pulao, then add the water and salt accordingly, as the peppers will absorb part of the salted water. Cook on a high heat till the rice comes to the boil, then lower the heat to very low. Cook till the rice is soft. If necessary, add more water if the rice is not soft and water has dried up. Top with fried potatoes.
     
  5. Serve with a green salad and a thick Parsi Dhansakh Dal.

200 gms. noodles
200 gms. cooked shredded chicken
6 springs onions cut julienne
1 capsicum cut julienne
1 orange carrot cut julienne
1/4 green cabbage cut julienne
2 thick celery stalks cut julienne
50 gms. french beans, washed, stringed and cut julienne
6 mushrooms, washed, finely sliced
2 tbsps. minced green chillies
2 tbsps. minced fresh ginger
2 tbsps. minced fresh garlic
1 tsp. aji-no-moto
1 cup tomato ketchup
1 cup chicken soup
1 tbsp. cornflour
2 fried eggs
salt
oil

Method of preparation

  1. Boil the noodles in salted water, drain and twist into a circular coil in the form of a quarter plate and deep fry till golden and keep aside.
  2. Take a Chinese wok. Add 3 tablespoons of oil and stir fry the chilli, ginger, for 2 minutes. Then add the french beans, carrots, cabbage, celery, spring onion, capsicum, mushrooms and 1 more tablespoon oil. Stir fry for 7 more minutes.
  3. Add the tomato ketchup, the chicken soup and stir on a high heat. Add the chicken shreds and mix well for 2 minutes. Mix the the cornflour with half acup of water and add to the boiling mixture, and stirring vigorously, allow it to cook for 5 to 7 more minutes. Taste for salt and sweetness.
  4. Fry 2 eggs and set aside.
  5. Place the crisply fried noodles onto a flat dish. Top with the chicken, Vegetable and tomato ketchup mixture. Place the hot fried eggs on top and serve.
